The weather is getting colder so we thought warm oatmeal cookies would be a great idea. Here is a simple recipe that we love and hope you enjoy!

- 1/4 cup packed dark brown sugar
- 1/4 cup butter, softened
- 1 ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 large egg
- 3/4 cup all-purpose flour
- 1 cup regular oats
- 1/4 teaspoon salt
- 1/4 cup chopped toasted walnuts
1 Preheat oven to 350º.
2 Place granulated sugar, dark brown sugar, butter, cinnamon and vanilla extract in a large bowl. Beat with a mixer at medium speed until well blended.
3 Lightly spoon flour into a measuring cup; level with a knife. Add flour, oats, salt and egg to mixture; beat well. Stir in walnuts.
4 Drop by level tablespoons, 1 1/2 inches apart, onto a baking sheet coated with cooking spray. Bake at 350º for 12 minutes or until lightly browned.
5 Remove from oven; let stand 2 minutes.
